Whether you have the opportunity to visit Japan or not, you should definitely take up the offer to try out these Hokkaido Chiffon Cupcakes. These are actually chiffon cupcakes that have custard cream piped into them, and is probably deemed to be one of the softest cakes in the history of baking!
By doing a simple Google search for Hokkaido cupcake recipes, one can easily find numerous amounts of them, with some claiming that their Hokkaido cupcakes are the softest and their baking methods are recommended. Being spoilt for choices has ended up causing more headaches instead. Of course, it is undeniable that every individual preference and expectation for taste and texture can be subjective, and this is part of what makes us unique as humans. What might be delicious to us might not be delicious enough for you, and we can't really tell how much we like a certain food unless we are given the opportunity to taste it for ourselves and make our own judgement. As such, tasting is believing indeed.
Based on our experience, the varying degrees of softness in the cupcakes are due to the differing proportions of flour and egg content during the baking process. Over the week, we have managed to fine-tune the recipe in such a way that the cupcakes ended up having a cottony soft texture to it. Talk about being on cloud nine after sinking your teeth into these cloud "equivalents"! Since the cupcakes are topped with fresh fruits, we have decided not to dust the surface with icing sugar to prevent the masking of the natural sweetness of the fruits. Personally, we feel that the recipe we have worked out has exceeded our expectations, and it will most likely be included as part of our updated retail pastry list in the near future.
